Hanging weight is typically around 60% of the live weight and after all is said and done, there will be another approximate 25-30% shrinkage from trimming, bones and hydration loss. For example: beef that weighs approximately 1,000 pounds on the hoof will have a hanging weight of about 600 pounds; it will yield a total of about 360 pounds of packaged beef; a side of beef will be ½ of that or about 180 pounds of packaged beef and a quarter of a beef beef is about 90 pounds of packaged beef. At Curtis Ranch we process our steers typically between 1000 & 1200 pounds on the hoof. Curtis Ranch Certified Grassfed Beef is not graded for fat marbling (select, choice, and prime) as we raise it to be low in fat. It is however Premium Quality, really tasty, and healthy!
